Dehydrated Tomates

Love the rich red colour of these tomatoes.

It is all around us right now the ripe fruits and vegetables are an indication of the end of summer season.  Apples, peaches, pears, corn, cabbages and yes tomatoes.

I am luck to have this Holland Marsh  wetland close by well about 20 minutes driving distance from my home.  As per their website “Produce selections range from more traditional crops such as carrots, onions and celery, to more diverse options like Chinese broccoli, Asian radish, and water spinach”.  So a lot of the vegetables I believe are coming from there to our local store that I have right around my home.

I also have a knitting / sewing friend that grows carrots and onions right in Holland Marsh. Luck for me I have been getting a bag here and their from her and her husband. With the onions  I make this amazing yummy onion soup. Carrots are great for carrot cake or soup too.

So since yesterday I have been dehydrating 3 baskets full of tomatoes so my hubby can take them on his up-coming hike to  Munising Falls Michigan (Pictured Rocks) with his hiking friends.

Tomato Sauce

….what can one cook up from fresh tomatoes was my question?

Well I thought I could start cooking some comfort food for the fall Season. Ahhh noooo not that yet!!! I know it is above 30 Degrees and no one wants to think of this crazy cold weather.File 2016-08-25, 7 01 03 PM

So put 10 big tomatoes chopped up into a pot. Well back up a little bit. Some Olive Oil, two onions chopped up, some celery also chopped up, garlic of course, ginger, soften all up first……now the tomatoes and just one cup of water and fresh Basile that my girlfriend had growing in her garden. Thanks Cheryl.  Oh almost forgot a cup of vegetable bouillon. Now simmer all on low for 4-5 hours….and voila

4 Hours of simmer still a bit watery….
Sooooo Yummmmy! Frische Tomaten von Ontario!!! …. was soll ich nun mit einem Korb frischen Tomaten kochen ist nun die Frage? … so ich denk ich könte etwas Vorsorgen für die Herbst-Saison. Tomaten Sauce die ich einfrieren kann. Ahhh noooo Herbst das noch nicht !!! Ich weiß, dass es über 30 Grad hier im Moment ist und ich will das kalte Wetter noch lange nicht sehen.

Sooo Yummy after 5 hours simmer adding some seasoning like paprika to it now…done

So setzen 10 große Tomaten in einen Topf. Ok halt zuerst heist es etwas Olivenöl, zwei Zwiebeln gehackt, einige Stengel Sellerie auch gehackt, Knoblauch natürlich, etwas Saltz und Ingwer alles zuerst dünsten…… Jetzt die Tomaten und nur eine Tasse Wasser und frische Basile, dass meine Freundin in ihr Garten wachsen hat, Dank Cheryl. Oh fast vergessen eine Würfel Gemüsebouillon . Nun alles auf niedrigen temperatur köcheln lassen 4-5 Stunden …. und voila….soooo Yummy
